Whether by choice or health necessity, more Americans than ever are eating gluten-free diets today, and companies are responding. Many restaurants now offer gluten-free menu options. General Mills began to offer more gluten free choices and Betty Crocker began offering gluten-free versions of its cookies and cupcake mixes. According to a study by the University of Maryland, as much as 10% of the population may be gluten sensitive, so expect this trend to continue to grow.
