Alvin’s father was in the military in the Philippines, but after deciding not to follow in his Dad’s footsteps, studied to be a nurse in Manila. With poor employment opportunities, Alvin and his wife decided to move away and found that the UK were hiring nurses. The culture (and weather) change was a shock to begin with, but now Alvin and his family are settled and wouldn’t live anywhere else.
Seven years ago he started with a muffin tin and now he owns every tin imaginable including savarin, tarte maison tins and every size of mouse rings possible, much to his wife’s amusement. His level of expertise and repertoire is some of the best we have seen, especially in patisserie. Alvin enjoys the technicality of patisseries and often loses hours on a day off to perfecting his latest bake. He once baked bread every day for three weeks until he believed it was perfect.
