Lovely recipe..thank you! One minor point. Pancetta should be spelled without the "h." As it's written in your recipe the word would be pronounced pan-ke-tta and mean something completely different....."Panca" means "bench." if you add the suffix -etta, it becomes "panchetta" and it means a small bench.
