Tahini is a Middle Eastern ingredient made by grinding hulled sesame seeds into a pourable paste. It tastes a bit like freshly ground peanut butter, but has a more wild and visceral taste. Mixed with some lemon juice, salt and dried thyme, it morphs into a flavor-packed spread that forms the perfect base for our savory toast.

Topped with creamy green slices of avocado, drizzled with a bit of olive oil, and sprinkled with a pinch of citrusy sumac, this not only looks splendid, it tastes the part as well. But it’s not just about the taste; in the same way the sesame compliments the avocado taste-wise, it also has complimentary nutritional characteristics. Sesame packs in the protein, fiber and minerals, while avocado is a powerhouse of vitamins and antioxidants. Together they’re an unbeatable bundle of energy and nutrients that will keep you powered through your morning routine.

Ingredients

  • 2 slices toasted bread
  • 2 tablespoons tahini, well stirred
  • 2 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried thyme
  • 1 avocado
  • olive oil (optional)
  • black pepper
  • sumac (optional)

Directions

  1. Toast your bread.
  2. Add the tahini, lemon juice and salt to a small bowl. Put the dried thyme in the palm of one hand and use your other thumb to rub the leaves until they crumble into a powder before adding it to the bowl. Stir the ingredients together until they're well combined and the mixture thickens into a spreadable consistency.
  3. Peel the avocado and cut the avocado in half around the pit. Twist the two halves to separate one half from the pit. For the half with the pit, gently tap the blade into the pit, and then twist the the knife to dislodge the pit. Peel both halves of avocado and then slice them as thinly as possible lengthwise. Squeeze a bit of lemon juice on the avocados to keep the from turning brown.
  4. Spread half the tahini mixture onto each slice of toasted bread. Fan half an avocado onto each slice of toast and then drizzle with olive oil. Sprinkle with salt, pepper and sumac to taste.

Yield: makes 2 slices of toast
