A few years ago, my boyfriend mixed feta cheese with a bit of milk in a food processor and the texture that it made was incredible. It was pourable, fluffy and tasted like heaven. I extended that very, very simple idea and applied it to goat cheese. The added cream cheese gives a bit more tartness to it, and the heavy cream really makes it fluffy and silky. This is the most basic of basic ideas, and really it isn’t that much of a recipe at all.
This combination is simple but every time I eat it, which during the summer months is a lot, I always remember why I make it: I can put it together in the matter of a few minutes, I usually have everything on hand and the sweet and salty combination is timeless.
If you’re looking for a super fast and simple summer appetizer to serve friends when they come over, serve this!
- 2 peaches
- olive oil
- 4 ounces goat cheese
- 2 ounces cream cheese
- 1 teaspoon heavy cream
- pinch of salt
- 1/2 loaf of bread
- 3 ounces of prosciutto
- 3 to 4 fresh basil leaves, thinly sliced
- Brush each of the slices of peach with olive oil. Over a medium grill (or if you don’t have a grill you can use a grill pan), set the peaches and allow them to grill for 1 to 2 minutes per side.
- Add the goat cheese, cream cheese, heavy cream, 1 teaspoon of olive oil and salt to a food processor. Pulse until smooth, light and fluffy.
- If you like, you can toast the bread or rub it with a bit of garlic. Smother each of the bread slices with a teaspoon or two of the whipped goat cheese. Top with a slice of prosciutto, a few grilled peach slices and basil.
Yield: 4 to 6 appetizer servings
