- 2 large Eggplants (pan fry with skin until dark brown)
- 6 large riped Plum Tomatoes (boiled and skinned)
- 2 large Spanish Onions (diced and pan fried)
- 6 cloves of Garlic (diced very fine and fried with the Onions)
- Mix all of the above and heat for 10 minutes over a medium heat on the range.
- Salt and pepper to taste.
- This goes really well with Pita or Tandoori breads.
