Cranberry Walnut Cake

  • 2 cups cranberries
  • 1/2 cup walnuts
  • 1/2 cup sugar
  • 2 eggs
  • 1 1/2 sticks butter melted and cooled
  • 1 cup sugar
  • 1 cup flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon almond extract

Directions

  1. Preheat the oven to 350°. Put the cranberries, walnuts and 1/2 cup sugar into a greased, 10" springform pan or pie plate.
  2. Mix the eggs, butter, 1 cup sugar, flour, salt and almond extract. Stir until smooth and pour over the cranberry-walnut mixture.
  3. Bake about 40 minutes or until a tester comes out clean.
