With the oven rack in the bottom position, heat the oven to 350 degrees. Grease a 9 x 5-inch loaf pan with nonstick cooking spray. Mix the flours, oats, baking powder, salt, and baking soda together in a large bowl. Whisk the buttermilk, honey, melted butter, and egg together in a large measuring cup, then add it to the dry ingredients. Stir until just combined.
Pour the batter into the prepared pan, and bake until the loaf is golden brown and a toothpick inserted into the center comes out clean, 55 to 60 minutes. Cool in the pan on a rack for 10 minutes, then turn out onto the rack. Cool the bread to room temperature, then cut into 12 slices.
I think part of the issue here was the judges were going into this expecting normal cakes. Making a dairy/gluten free cake isn't easy. The texture and taste get messed up very easily. I'm lactose intolerant and I used to have some issues with gluten so I've tried MANY dairy and gluten free items. Savory and sweet. And it's so easy to mess
Have added the Black pepper oleoresin that lends a rich color, taste, and flavor to the food and the required dosage gives it a standardized taste and consistency just like the natural whole pepper. And the best part is it saves time without losing the flavor.

I have checked about 7x and 500 grams of flour comes to almost 4 cups. I am curious how you got a conversion of 2.11 cups? Tried it both ways. Didn’t feel either came out the way they should have. I’m new to bread baking.
You can always use a towel. That is what I use. Remember, plastic is a relatively new product. Using a towel is good for your pocketbook, as you probably use the plastic once. A towel can be used over and over again. In addition, it's better for the environment.
Those look amazing and super cute! You are so lucky you did not use the dehydrated raspberries like I did... yuck... but everything else turned out well.
