

Utah-based Caffe Ibis is a 33-year-old green business and one of the first fair trade roasters in the U.S. Its Mayan Sunrise 100% Arabica coffee is certified organic, fair trade and shade grown. Co-owner and head roaster Randy Wirth says, “Triple certified coffee is our niche.”
Wirth says that Caffe Ibis uses fair trade coffees from countries including Colombia, Ethiopia, Mexico and El Salvador. The company was the first to spotlight women farmers with a triple-certified coffee called Café Feminino. Products tend to be sold at natural and gourmet food stores, including Whole Foods.
“We are a small custom house and part of our goal is to have the eyes of the farm and the eyes of the customer in front of us when we work,” Wirth says. “We want to know our farm partners and who it goes to.” The company currently sells 250,000 pounds of coffee a year, and has turned down distribution offers from larger companies. “We’re not prepared to sacrifice quality to be a bigger business.”
