“My comfort food is Portuguese Chicken and Rice. Other than the flavors and aroma, it’s evocative of the more peaceful times in my house when I was growing up. The Cubans and Spanish have a similar dish—arroz con pollo—and it’s a great dish, one of the best you’ll ever eat. My mother made it for my father—it was one of the dishes my Portuguese grandmother taught my Irish mother to make.”
