The Meaning of Food

Comfort Foods

Tom Douglas
Chef, Dahlia Lounge, Etta’s, Seattle

“I don’t have a particular favorite comfort food; all food is emotional to me. The whole process of eating and sharing and family is what it’s about. I like making tacos with my daughter, and my wife loves them. I’ll stop at the local Mexican restaurant that makes tortillas, and we’ll make some tacos.”

“I’m known as a fancy-pants chef, and it’s always nice to get away and cook something different than you’ve been cooking all day. America hasn’t discovered pork butt; we’re all buying pork loin, which is dry as can be. I think it’s a great product, not something I can serve in my restaurants.”
