Seeded Baguettes with Asiago Cheese
Makes 2 Loaves

Preheat oven to 400°

Ingredients:

  • 3 cups warm water, about 100°
  • 2 tablespoons dry active yeast
  • 2 tablespoons extra virgin olive oil
  • 3/4 cup grated asiago cheese
  • 6-7 cups all-purpose flour
  • 1 tablespoon salt
  • 1 egg
  • 2 tablespoons poppy seeds

Place the water and the yeast in the bowl of a mixer and mix to combine. Let stand about 5 minutes until active and creamy. Add the olive oil, cheese and about 3 cups of the flour and mix until you have a smooth dough. Add another cup of flour and the salt and mix until you have shaggy dough.

Place the dough on a board and knead the dough adding as much of the remaining flour as needed to make a smooth elastic dough. Place the dough in a large well-greased bowl and let rise until doubled in volume.

Deflate the dough and form into two baguettes. Place in the pans and cover and let rise about 1 hour or until doubled.

Mix the egg with two tablespoons of water and gently brush the loaves. Sprinkle with the seeds and slash the loaves.

Place in the oven and bake until golden brown - about 45 minutes.

Let rest about 10 minutes then slice to serve.
