Alice Waters has now focused on a seemingly humble target: school lunch, which she hopes to transform first in Berkeley, then throughout California, the other 49 states, and beyond. Her Chez Panisse Foundation, along with other local organizations, proposed to the Berkeley Board of Education that lunch be incorporated into the academic curriculum, much as physical education was in the 1970s.
In June 2004, the board approved the School Lunch Initiative.
