Garden manager Kelsey Siegel sees another aspect of the Edible Schoolyard’s teachings. “A lot of our students don’t know a carrot or potato grows in the ground,” he says. “We want them to have a sense of where their food comes from and the natural cycles of life — they do the planting and the harvesting, then their cooking scraps become compost that goes back in the ground to start the cycle again.” |
