    My favorite caserole dish is an old fashion shepperd’s pie. The filling has lots of fresh herbs and a few peas. The potatoe topping is not supper smooth (I like the texture of some small chunks of potatoes) but it has lots of cream AND butter. The dish goes under the broiler to highlight the design me or my daughter makes on the mash potatoes. I would pair the dish with a stout beer for adults, or warm apple juice for kids.

    I just made a spinach, pasta, with chicken, bacon, and sundried tomatoes casserole in a cast iron skillet. You make a thickened sauce with chicken broth and milk or half and half and add the wilted, drained, spinach, cooked bacon and chicken, sundried tomatoes and pasta. Bake in 350 oven for 30 minor so. It was delicious.

    We call it dog food casserole! It’s sooo good. Sauteed onions, celery, ground beef with cream of something soup, all topped with bean sprouts and then covered with weird crunchy chow mein noodles. It’s weird.. but it’s sooo good!

    I have 2 favorite casseroles to make and they are corn bread casserole and sweet potato casserole! I just throw all the ingredients in the dish and always comes out YUMMY! 🙂

    My godmother’s broccoli casserole is the event of the winter holiday season in my family. She doesn’t skimp on the dairy but she also doesn’t overdo it. The broccoli and chives remain the dominant flavor. And that’s great because it feels like a healthy dish, in spite of the cheeses. :0)

    My favorite casserole is one that we used to make as a kid. We always called it meat and potato casserole, but when I met my husband he kept talking about this shepard’s pie they used to have as kids. Turns out it the same casserole! I recently found it in a cookbook my MIL brought me with recipes from Montana – in there, it’s called Cowboy Cassrole.
