Have you ever noticed that sometimes with kids getting them to eat certain foods is less about the food and more about what they can dip it in? Whether it is ranch dressing, ketchup, or barbeque sauce, one thing is for certain: kids love their dips. They often love the dip more than the food they are eating. As a parent I sometimes cringe watching my children not only dip their foods into a not-so-healthy sauce, but double, triple, or even quadruple dip a small morsel of food. Seriously, would you like some French fries with that ketchup?

Today I have a quick and easy spicy black bean dip that you can feel great about your children dipping into. Made with black beans, salsa, fresh lime juice, cilantro, and a few spices, this dip can be made in just a few minutes. You can serve it with corn tortilla chips or sliced vegetables.

You can also determine how spicy you would like to make it by using mild, medium, or hot salsa. This dip is very similar to the ones you buy in upscale grocery stores, although this one will taste noticeably fresher and better. So encourage your kids to dip away. Enjoy!

Recipe: Healthy Spicy Black Bean Dip

A healthy, quick, and easy black bean dip made with fresh lime juice, cilantro, salsa, and spices.

Ingredients

    • 15 ounce can black beans, drained and rinsed
    • 1/4 cup fresh salsa
    • 1/4 cup fresh cilantro, including stems
    • 2 tablespoon fresh lime juice
    • 1 teaspoon cumin
    • 1/2 teaspoon garlic salt
    • 1/4 teaspoon chili powder
    • 1/4 teaspoon kosher salt

Instructions

    • Place all the ingredients in a food processor and pulsate until the black beans and cilantro are nearly blended.  Add up to a tablespoon of water to thin the hummus if necessary.
    • Serve with tortilla chips or fresh cut vegetables like bell pepper strips, cucumbers, zucchini, celery, snap peas, or carrots.
