Mother’s Day is quickly approaching and do you know what I want?  I’m going to tell you regardless of your answer.  I want to wake up Mother’s Day morning in silence when my body is ready to wake up and not by the jolting sound of the radio alarm suddenly turning on.  I also want to wake up without having to run out of the door quickly or having to drive someone somewhere.

I’m going to tell you what I always tell my kids every year because they ask.  I want peace.  I want my family to intentionally work towards giving me a day of peace.

Aside from this chocolate is a close second.  I know many of you will be receiving beautiful handmade cards, World’s Greatest Mom mugs, and hopefully breakfast in bed.  But sometimes us moms must take matters into our own hands.  Breakfast is a wonderful start to Mother’s Day but it is equally nice to finish the day off strong.  Wouldn’t the day feel more complete eating spoonfuls of warm chocolate cake with a chocolate liquid center oozing out after the children have gone to bed? Who is with me on this?

I propose we moms to do what we do best: take matters into our own hands.  I’ve created a single serving molten lava cake that can selfishly be enjoyed by one person or shared with another.  However, this recipe is all about making just one.  Because for one day out of the year we get to make it only about us.  And you deserve it.

I’m also sharing  five other recipe ideas you will feel inspired by to make for Mother’s Day from Kitchen Explorers.  Hopefully you won’t be making any of them.  Instead, you’ll be in bed and someone will be bringing you one of the dishes they “found” on the internet when you “accidentally” left your browser open to this page.

As for the lava cake, this recipe is a keeper.  Lava cakes are extremely easy and quick to prepare as well as impressive when plated with a little garnish.

On Mother’s Day go ahead and sleep in.  But if no one volunteers to make this cake recipe then feel free to make it for yourself. It will be good for everyone, because we all know that if mama isn’t happy, nobody is happy.

Recipe: Molten Lava Cake Recipe for One

Single serving molten lava cake recipe - Easy recipe that makes one molten lava cake with a warm chocolate lava center. Perfect as a single chocolate dessert or to share with one other person.


    • ¼ cup semi chocolate chips
    • 2 tablespoons butter
    • 2 teaspoons sugar
    • ¼ teaspoon vanilla extract
    • 1 egg (room temperature), beaten
    • 1 tablespoon flour
    • Optional Garnishes: ½ teaspoon confectioners’ sugar for dusting, fresh fruit, and a dollop of whipped cream or vanilla ice cream.


    • Preheat oven to 400°F.
    • Fill a small pot with 1-inch of water.  Fit a larger stainless steel or glass bowl on top of the pot to make a double broiler.
    • Heat the pot of water on medium-high heat.
    • Add the chocolate chips and butter to the stainless bowl.  The chocolate will quickly begin to soften and melt.
    • Quickly whisk the chips until nearly completely smooth.  Turn off the heat and add the sugar and vanilla.  Continue to whisk the chocolate until completely smooth.
    • Carefully remove the bowl from the hot pot to the counter.  Allow the chocolate to cool for 5 minutes, stirring occasionally.
    • Whisking continuously, slowly add the egg into the chocolate mixture a teaspoon at a time, incorporating the egg addition each time completely before adding more.  You don’t want to add the egg too quickly because the warm chocolate will cook the egg.  Continue to do this until the chocolate batter looks smooth.
    • Stir in the flour until mixed in.
    • Generously spray the bottom and sides of one 4-ounce ramekin or coffee mug.  This will help the cake to release from the ramekin after baking.
    • Add the batter to the ramekin.  It will be about ¾ cup full.
    • Bake for 10 minutes.  After 10 minutes, the cake will appear to be baked but when touched in the center will feel very soft.
    • Remove the cake from the oven and allow it rest on the counter for a minute.
    • You can serve the cake in the ramekin or turn it over onto a plate.
    • If you gently touch the sides of the cake with your finger, it should pull away from the sides.
    • After one minute, cover the ramekin with a serving plate and flip the plate to right side up.  Slowly and carefully begin to lift the ramekin off the plate.  If it appears the cake is not releasing, lower the ramekin back down to the plate and gently shake the ramekin back and forth and try again.  If it still does not release, invert the cake back to the ramekin and use a thin paring knife to release the cake from its side and flip again.
    • Dust the lava cake with powdered sugar and dollop with a small spoonful of whipped cream or vanilla ice cream.  A small berry and fresh mint leaf also make nice garnishes.

    By sugar, would we put 2 teaspoons of regular granulated sugar? Because I see some other recipes call for powdered sugar. Also, does this recipe serve exactly one 4 oz ramekin or would there be extra batter left over if I wanted to make a bigger lava cake? Thanks, looking forward to trying this out! 🙂

      I’ve kept mine in the fridge if I planed to bake it the next day. Or it keeps in the freezer for about a week, and you don’t have to thaw it before baking

    I replaced the chocolate chips with Hershey’s cookies and cream, and used maple syrup instead of vanilla syrup and it came out amazing!!! Definetly needed to cook it longer though! Luckily, doubled the recipe!
