Oh 4th of July, when did you become the poster holiday-child for home cooks everywhere to shamelessly serve so many food and beverages that should not belong together? For instance, there is a 4th of July drink circulating around the internet that is layered in three different store bought drinks that are supposed to be layered on top of one another to make a red, white, and blue drink “kids will love!” This drink is one part cranberry juice, one part pina colada flavored drink, and one part florescent blue sports drink. Now, tell me, aside from it being red, white, and blue how thoughtful is this drink when it comes to taste? I’m sorry, but I cannot reconcile this level of craziness.
I am, however, all about the use of fresh fruit in shades of red and dark blue berries with a side of whipped cream or vanilla ice cream in just about any dessert. I realize that many of you will be celebrating the 4th of July with friends and family and the urge to bring a patriotic looking dish weighs in the back of your mind. Resist the mixing of ingredients that have no business being paired together in order to fulfill your thematic dish. Instead, go with the tried and true classics that are always the first to be devoured.
Today I am sharing with you a classic recipe for Cheesecake Stuffed Strawberries topped with a single blueberry. My 6 year old son calls these, “USA Strawberries.” I like to think of them more as divine strawberries.
To make these stuffed strawberries all you need to do is cut the stems off, and then cut a deep “x” into each one. The filling is made with sweetened cream cheese that tastes very much like cheesecake. After piping the filling into each berry, a blueberry finishes each one off. These poppers are insanely delicious considering how simple they are to make. Just make sure to chill them for one hour in the refrigerator to help them set.

Recipe: Cheesecake Stuffed Strawberries Recipe
Cheesecake Stuffed Strawberries Recipe - These simple stuffed cream filled strawberries are easy to make and a crowd favorite, not to mention a great gluten-free dessert.
- 1 lb. fresh strawberries
- 1 (8 oz) package cream cheese, softened
- 1/2 cup confectioners' sugar, sifted
- 1 teaspoon vanilla extract
- 1/2 cup fresh blueberries
- Optional: 2 teaspoons fresh lemon zest
- Cut the stems from the strawberries, so the strawberries can sit cut side down.
- Cut a deep "X" from the tip down being careful not to cut all the way through.
- Gently open up the strawberry. Set aside.
- Cream the cream cheese, sugar, and vanilla (and optional lemon zest) until nice and fluffy.
- Pipe the filling into each strawberry using a pastry bag or a zip top bag with a pasty piping tip. You may also cut the end of a zip top bag to make a free form pastry bag and tip as well.
- Top each filled strawberry with a blueberry.
- Chill the strawberries for at least an hour before serving.
