I Wish, I Wish Birthday Cake

Cake

What You'll Need for the Cake:

  • 1 1/3 cups sugar, divided
  • 2 1/2 cups flour
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/2 cup plain, low-fat yogurt
  • 1/4 cup canola oil
  • 1 tsp vanilla
  • 1 tsp almond extract
  • 4 egg whites
  • 1/2 cup mini baking M&Ms

What You'll Need for the Icing

  • 12 oz. cream cheese
  • 3/4 cup butter, softened
  • 2 1/2 cups confectioners sugar
  • food coloring
  • yellow sugar crystals (optional)

Serves 15-18

How to make the Cake:

  1. Preheat oven to 350 degrees. Butter two 8" cake pans generously, and set aside.
  2. In a large bowl, combine 1 cup sugar, flour, baking powder, soda, and salt. Mix in buttermilk, yogurt, oil, vanilla and almond extract.
  3. In another bowl, beat egg whites on high speed. After they're thick and foamy, gradually add 1/3 cup sugar and continue beating until the egg whites form soft peaks.
  4. Put one heaping spoon of the egg white mixture into the large bowl and mix well. Then gently fold the rest of the egg mixture in, along with the M&Ms. Do not over mix.
  5. Pour into prepared pans and bake for approximately 25 minutes, until a tester comes out clean and the cakes are golden brown.
  6. Let cakes cool, then remove from pans. If desired, you can cut them into a more dragon-scale (oval) shape. Wrap well in tin foil, then refrigerate or freeze; icing goes on a cold cake much more smoothly.

How to the make the Icing:

  1. Beat cream cheese and butter together until completely smooth and fluffy. Gradually add sugar. Separate into several bowls, mixing a different color into icing in each bowl. Follow the photo, or any picture you may have of a dragon scale. You will need blue or purple (the purple made from red and blue coloring, mixed), green, yellow, and orange (made from red and yellow). The biggest bowl should be a blue or purple, which you will use as the top color of the "scale," as well as for the sides and between the layers.
  2. Put the first cake round on a plate and ice the top with blue or purple (that will be the center of the cake). Top with the second cake round. Ice the top of the cake in arcs of blue or purple, green, yellow, and orange. Ice the sides with blue or purple. Sprinkle with yellow sugar crystals, if desired.
