Banana Nut Bread

Total Time: 50 minutes / if made from scratch: 2 hours
Makes 2 large or 4 small loaves - 1 18.25-ounce box yellow cake mix
1 3.4-ounce package instant banana pudding
1/2 cup water
1/2 cup vegetable oil, plus more for the pans
2 ripe bananas, mashed
4 eggs
1 cup (4 ounces) chopped pecans (optional)
Heat oven to 350º F.
Mix all the ingredients in a large bowl. Pour into 2 large or 4 small
greased loaf pans. Bake until a tester inserted into the center comes
out clean, 40 to 45 minutes.
Chili Pie

Makes 6 servings
1 pound sweet Italian chicken sausage, casings removed
1 tablespoon chili powder
2 15.5-ounce cans kidney beans in sauce
1/2 cup salsa
1 8 1/2-ounce box corn-bread mix (requires 1 egg and 1/3 cup milk)
1 cup (4 ounces) shredded Cheddar
Heat oven to 400º F.
Cook the sausage over medium heat in an ovensafe skillet, crumbling
the meat, until no trace of pink remains. Drain the fat. Add the chili
powder and cook, stirring constantly, for 1 minute. Add the beans and
salsa. Bring to a boil. Remove from the heat.
Meanwhile, prepare the corn-bread mix according to the package directions, then add in the Cheddar. Spread the corn-bread batter over the chili. Bake until golden, 15 to 20 minutes. Let cool for 10 minutes before serving.
