Lemon Soda Float

Serves 6 to 8 - 2 pints vanilla ice cream
- 36-ounces lemon soda, such as San Pellegrino Limonata or Newman's Own Sparkling Lemonade
Divide the vanilla ice cream into 6 to 8 serving glasses. Pour the lemon soda over it to fill each glass, using about 36 ounces. Wait a few minutes, until the lemon soda freezes, to create a slushy coating around the ice cream.
TIP: There are great non-dairy alternatives that can be substituted for ice cream in this recipe. Try the vanilla from Turtle Mountain Purely Decadent Soy Delicious; it has the richness of ice cream without the dairy.
