Goat Cheese Bruschetta
Vinaigrette adds flavor to creamy goat cheese bruschetta

Goat Cheese Bruschetta


  • Hands-On Time: 15 minutes
    Total Time: 15 minutes
    Makes 6 servings
  • 1/2 cup fresh lemon juice
  • 1 teaspoon honey
    2 tablespoons balsamic vinegar
    2 tablespoons chopped fresh herbs (such as dill, parsley, or basil)
  • 1 small shallot, finely chopped
  • 1/2 cup extra-virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
    1 baguette, thinly sliced and toasted
    About 7 ounces goat cheese

In a small bowl, whisk together the lemon juice, honey, vinegar, herbs, and shallot. Whisking constantly, slowly add the oil in a steady stream, whisking until emulsified.  Season with the salt and pepper.

Drizzle the vinaigrette over the toast and spread with the cheese. Finish with another drizzle of vinaigrette.
