Episode 7 Journal

What did you think of today's challenge?

Terrines, terrines … what can I say? I know I "could" excel at this challenge but it was going to be difficult.

What did you prepare today?

Shellfish terrine with dry beurre blanc.

How do you think you did? Is there anything you wish you'd done better?

I really disappointed myself in this challenge because I didn't listen and incorporate any of the local ingredients. I should have also added a stabilizer to my mousseline.

What was the highlight of the day's events?

Being able to stay in Miami one more night without getting 86'd. Also going out to dinner as a group and celebrating Matt's birthday was nice.

Are there any lessons you took away from today?

Think before you execute. And I should have used the kitchen disaster question more wisely.

What was the most constructive or interesting piece of feedback you heard from the judges?

That they liked that I used all the shellfish available and that I utilized the shells of the lobster to infuse the cream. As well as having a good flavor profile.

How do you think you are doing in relation to your fellow competitors?

OK I would say. … I know that I am stronger in some areas than others, but on a whole I feel good with my performance thus far.

Who do you think is faring the best and why (we recognize this changes from day-to-day)?

Sara is doing well. I think she hasn't had any bad reviews, or should I say hasn't been called forward to get reamed from the judges.

What do you think your fellow competitors think of you (we recognize this changes from day-to-day)?

I do have weariness.
