What did you think of today's challenge?
What did you prepare today?
Dover sole encrusted in phyllo, mustard buerre blanc, Dijon demi; crab potatoes, green beans and mascarpone.
How do you think you did? Is there anything you wish you'd done better?
I think I did OK, but I forgot parsley, and I used the best knife I had (my boning knife was stolen last month).
What was the highlight of the day's events?
Not all highlights are good. I was bummed when Mike got the pan.
Are there any lessons you took away from today?
Yeah, I must take what the chefs say literally, they don't speak figuratively.
What was the most constructive or interesting piece of feedback you heard from the judges?
I am a 'make do' chef, so I made do with the knife I had. I should have asked someone for one of theirs.
How do you think you are doing in relation to your fellow competitors?
Like today's competition, I think I am deceptively easy going, but I didn't last this long in my career by always being easy going.
Who do you think is faring the best and why (we recognize this changes from day-to-day)?
Sara is sneaking by everybody!
What do you think your fellow competitors think of you (we recognize this changes from day-to-day)?
Like I said, they think I am an easy going guy, but if I make it to Miami I'm sure it will be a blood bath. There you will see the worst of everybody.
