2 eggs

Peel and grate potatoes. Drain all moisture. Grate onion and add to potatoes. Beat eggs into mixture; add salt + pepper. Mix well. Fry spoonfuls in hot oil until brown on the outside and cooked on the inside. Drain on paper towels. Enjoy with applesauce.
