I know I’ve talked about it before on here, but I really love winter squash. And today I have a fantastic (and easy!) recipe for brown sugar roasted butternut squash for you.

You’ll never believe how simple it is, and it’s a guaranteed crowd pleaser. I made this last weekend for a casual fall-themed dinner party and my guests couldn’t stop raving about it. I promised I would share the recipe, so here it is!

Brown Sugar Butternut Squash

You only need three ingredients: butternut squash, brown sugar and sea salt. I like the crunchy sea salt — the kind with the big flakes.

Enjoy this roasted squash alongside your Thanksgiving feast, toss it in a big green salad or throw it in some pasta with goat cheese — any way you choose to enjoy it, I know you’ll love it!

This brown sugar roasted butternut squash recipe is great for a holiday side dish. Food blogger Jenna Weber shares her suggestions for other ways to incorporate this squash recipe into other meals in a full post on the Fresh Tastes blog.



  • 2 lbs peeled & cubed butternut squash (about 1 average sized squash)
  • 2 tbsp brown sugar
  • salt to taste


  1. Preheat your oven to 400 degrees.
  2. Lay your cubed squash out on a parchment paper lined sheet tray and sprinkle the brown sugar over top.
  3. Toss gently and roast for about 40 minutes, until deeply caramelized and tender.
  4. Remove from the oven and sprinkle a generous pinch of sea salt on top. Serve.
