Chicken Adobo Bowl
Adobo is a traditional Filipino dish, though typically served with whole chicken, skin on or with pork belly. This dish was moderated to be lower in sodium, fat, and inclusive of whole grains and vegetables for a well-rounded nutritional plan. A lower sodium soy sauce can be used, and liberal application of the sauce to top the bowl is what gives the bowl the distinctive adobo flavor. You can replace or add to the kale and carrot with other vegetables such as blanched broccoli but keep the rice –the rice will help absorb the sauce to keep it from becoming too soupy.
