“The Port of Call is a very seasonal combination of Gin, ruby port, fresh lemon juice, cranberry preserves and cinnamon bark syrup. It’s a delicious balance of sweet and tart with a healthy dose of cinnamon. The flavors are so evocative that the drink reminds you of a familiar cozy holiday tradition that you’ve never actually experienced.
My inspiration for the drink was to try to incorporate real cranberries in a cocktail, not the processed artificially flavored kind you see everywhere. From there the other ingredients seemed to fall into place. It’s got spice from the gin and cinnamon, fruit from the port, and lemon to balance it all out.”
The Port of Call Cocktail

- 1 ounces London dry gin
- 1 ounce ruby port
- .75 ounces lemon juice
- .5 ounces cinnabark syrup
- 1 large barspoon (1/8 ounce) cranberry preserves
- Combine all ingredients in a shaker.
- Shake and strain over crushed or cracked ice in a rocks glass.
- Garnish with a blackberry, raspberry and mint sprig.
Meet the Bartender
Tom Macy is a cocktail bartender, creator, writer and consultant. A native New Yorker, Tom is the head bartender of the award winning cocktail bar Clover Club in Carrol Gardens Brooklyn, where he started as a barback in 2009. He is also the cocktail consultant for Back Forty and Back Forty West restaurants in Manhattan. His cocktails have been featured in several publications including Time Out New York, Edible Brooklyn, The San Francisco Chronicle, Paper Mag, StarChefs, Serious Eats, Lifestyle Mirror and Tasting Table. Tom also writes a cocktail culture blog on the Huffington Post, has appeared on Heritage Radio and is the resident cocktail expert in Morgan Spurlocks Yahoo! Screen webseries Mansome.
