It’s truly impossible to overstate how important Julia and her books were to me at the beginning of my restaurant career. Strong and vocal female chefs were not easily found in the 1970’s to use as a role models, but there she was laughing, teaching, encouraging and telling us to press on even if the results were not exactly as we expected. When developing my menu’s today I still ask “What would Julia do?”
