10 Delicious Ways to Use Rotisserie Chicken

For parents who are looking for a quick dinner idea, rotisserie chicken quickly answers the common kid question, “What’s for dinner?”  Roasted chicken is also versatile enough to be enjoyed as a main dish or used as an ingredient in a recipe.

In our home, I usually buy a rotisserie chicken once every few months to serve with a side of rice and steamed vegetables, and call it dinner.  The tender, juicy, and succulent chicken is always devoured by my children.  It is my definition of fast food.  A couple benefits of having left over chicken is making stock (liquid gold), or using the meat for soups and salads the next day.  Every once in awhile I will buy a rotisserie chicken for its deep roasted flavor and use it as part of a casserole.

Although one could argue I should roast my own whole chicken, that argument doesn’t work on those days when time is an issue or I just don’t feel like turning my oven on.  Buying a pre-roasted chicken is a great time saving shortcut to feeding my family a good dinner.

Here is a roundup of 10 delicious recipe ideas using rotisserie chicken (or cooked chicken) to inspire you from around the blogosphere.  Enjoy!
