Erika Rojas is a graduate of the the Comal Heritage Food Incubator in Denver, Colorado. Hailing from Guadalajara, Erika now has her own business–a food truck where she cooks and serves the Mexican dishes she grew up with, including Birria.     Ingredients

  • 2 lbs beef
  • 10 oz - Tomatoes
  • 2 oz- Chile California
  • .5 oz Sesame seeds
  • .5 oz Oregano
  • .3 oz Cumins
  • .2 oz Cloves
  • .3 oz Ginger
  • .2 oz Black pepper
  • 2 pz Bay leaves
  • 1 tbsp Vinegar
  • 3 oz Onions
  • 2 cloves Garlic
  • 2 tbsp Salt

    Directions

  1. Blend everything with 2 cups water
  2. Add the sauce to the beef
  3. Cook slow for 2 hours
