Vian Al Nidawi is an Iraqi-Syrian refugee who has worked her way up in the kitchen to the position of lead chef at the Comal Heritage Food Incubator, in Denver, Colorado. In her special Return of the Artisans Lidia tries and loves one of Vian's signature dishes, JaJ Bl Firin.

Cook time: 60 Minutes



  • 2 chicken leg quarters
  • Marinade: ½ Spanish onion
  • 3 garlic cloves
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp Greek Yogurt
  • 1 tsp paprika
  • 2 Tbsp vinegar
  • Salt, to taste


  1. Preheat oven to 450F (convection)
  2. Place chicken legs in a baking pan
  3. Put all ingredients under marinade in a food processor and mix until smooth.
  4. Pour marinade over the chicken legs
  5. Cover baking pan with foil and bake 60 minutes at 450F
  6. Remove foil and cook uncovered at 450F for another 10minutes or until skin becomes crisp
