Spaghetti Alla Carbonara Recipe | Italian Recipes | PBS Food

Paul of Houston, Texas submitted this recipe which was a winner in our Italian recipe contest judged by Mary Ann Esposito of Ciao Italia.

Cook time: 15 Minutes

Total time: 25 Minutes

Yield: 2-3 servings



  • 3-4 slices of bacon sliced (not diced) (I forego pancetta as it doesn't add that much for me, and complicates the recipes)
  • 1 egg
  • 2 tablespoons of shredded parmesan
  • 1/2 lb. spaghetti
  • good grind of fresh pepper


  1. Cook spaghetti al-dente
  2. Cool bacon until amost crisp, but not too crisp
  3. Drain - reserve 1/2 cup of liguid
  4. Add spaghetti and bacon and drippings back to pot
  5. Add egg - and stir/cook into the spaghetti on low heat
  6. Add pepper
  7. Add 1/2 parmesan
  8. Serve with parmesan for each person to add
