Episode 3 Journal

What did you think of today's challenge?

Mentally exhausting — the egg was great but I wasn't prepared for the mise en place.

What did you prepare today?

Duck over red Thai rice in a Thai Kaffir soy sauce and a bok choy cannelloni filled with shitake mushrooms, leeks, basil, with three jumbo shrimp cooked in a shrimp broth.

How do you think you did? Is there anything you wish you'd done better?

I did good, but wish I would have had more time to plan.

What was the highlight of the day's events?

Not being 86'd, being surprised by the mystery ingredients.

Are there any lessons you took away from today?

Don't tell your mistakes, only focus on the positive and let the judges figure out your mistakes.

What was the most constructive or interesting piece of feedback you heard from the judges?

Good flavors and good presentation.

How do you think you are doing in relation to your fellow competitors?

I feel I am doing good compared to most, but feel I am still not doing as good as I should be.

Who do you think is faring the best and why?

Today sounded like I did and Autumn did.

What do you think your fellow competitors think of you?

Not really sure, I am sure they see me as competitive and at the least a potential threat.
