{"id":33861,"date":"2016-12-20T15:37:52","date_gmt":"2016-12-20T20:37:52","guid":{"rendered":"https:\/\/www.pbs.org\/wnet\/religionandethics\/?p=33861"},"modified":"2016-12-21T17:38:02","modified_gmt":"2016-12-21T22:38:02","slug":"being-a-balaboosta-at-hanukkah","status":"publish","type":"post","link":"https:\/\/www.pbs.org\/wnet\/religionandethics\/2016\/12\/20\/being-a-balaboosta-at-hanukkah\/33861\/","title":{"rendered":"Being a <em>Balaboosta<\/em> at Hanukkah"},"content":{"rendered":"<p>By Michele Amira<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-33864\" src=\"https:\/\/www.pbs.org\/wnet\/religionandethics\/files\/2016\/12\/Untitled-6.jpg\" alt=\"untitled-6\" width=\"358\" height=\"472\" srcset=\"https:\/\/www.pbs.org\/wnet\/religionandethics\/files\/2016\/12\/Untitled-6.jpg 358w, https:\/\/www.pbs.org\/wnet\/religionandethics\/files\/2016\/12\/Untitled-6-341x450.jpg 341w\" sizes=\"auto, (max-width: 358px) 100vw, 358px\" \/>Famed Israeli chef Einat Admony is a <i>New York Times<\/i> best-selling author and the owner of three wildly popular restaurants in New York City: <a href=\"http:\/\/www.taimfalafel.com\">Taim<\/a>, <a href=\"http:\/\/barbolonatny.com\/about.html\">Bar Bolonat<\/a>, and <em><a href=\"http:\/\/www.balaboostanyc.com\">Balaboosta<\/a><\/em>.<\/p>\n<p><i>Balaboosta,<\/i> a term of endearment in Yiddish, means \u201cperfect homemaker.\u201d But ask Admony for her own definition and she replies, \u201cTo me, <i>balaboosta<\/i> means someone who loves to bring family together by cooking and caring for them.&#8221; The word is also the title of her cookbook <i>Balaboosta: Bold Mediterranean Recipes to Feed the People You Love.<\/i><\/p>\n<p>This month Ohev Sholom, Washington, DC\u2019s oldest Orthodox synagogue, hosted Admony for a pre-Hanukkah celebration that focused on being a <i>balaboosta<\/i>\u2014cooking as a family and for the family. Just as Hanukkah celebrates the miracle of light, being a <i>balaboosta<\/i> and bringing family together can be a small miracle with a great impact.<\/p>\n<p>At Ohev Sholom there was a <i>Malchei haMitbach <\/i>(Kings of the Kitchen) cooking contest, for which Admony was one of the guest celebrity judges. The concepts of creativity and gourmet sustainability in Jewish cooking were on display as four teams had to cook from their soul, choosing one ingredient to highlight from the seven species indigenous to Israel. Each on-the-spot creation came from the imagination of the participants.<\/p>\n<p>Admony\u2019s latke-making demonstration strayed from the traditional Ashkenazi potato pancake recipe and focused more on a gourmet approach, incorporating ingredients such as turmeric and Greek yogurt for a tzatki-like dipping sauce.<\/p>\n<p>&#8220;Much like us (as Jews),\u201d said Admony, \u201cIsraeli cooking is a melting pot of flavors. It comes from a lot of different cultures that came together throughout Israel, from Morocco to Eastern Europe.&#8221;<\/p>\n<p>\u201cI was a driver in the Israeli army,\u201d Admony explained, \u201cbut being in the army helped me to be more disciplined, punctual, clean, and organized\u2014all the skills that are needed to be successful in the kitchen.\u201d<\/p>\n<p>You don&#8217;t have to have served in the Israeli army to master one of Admony\u2019s Hanukkah recipes. Here is one of the latke recipes she used in her cooking demonstration at the synagogue:<\/p>\n<p><b>Beet Latkes with Greek Yogurt Sauce<\/b><\/p>\n<p><i>Makes 10-12 latkes <\/i><\/p>\n<p>1 cup grated potato<\/p>\n<p>2 cups beet<\/p>\n<p><b><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-33862 alignright\" src=\"https:\/\/www.pbs.org\/wnet\/religionandethics\/files\/2016\/12\/Untitled-4.jpg\" alt=\"untitled-4\" width=\"386\" height=\"472\" srcset=\"https:\/\/www.pbs.org\/wnet\/religionandethics\/files\/2016\/12\/Untitled-4.jpg 386w, https:\/\/www.pbs.org\/wnet\/religionandethics\/files\/2016\/12\/Untitled-4-368x450.jpg 368w\" sizes=\"auto, (max-width: 386px) 100vw, 386px\" \/><\/b>1 1\u20442 cups grated onion<\/p>\n<p>1 egg<\/p>\n<p>1 tablespoon chopped thyme leaves<\/p>\n<p>4 tablespoons flour<\/p>\n<p>1 teaspoon rosemary<\/p>\n<p>1 tablespoon salt<\/p>\n<p>1 pinch of freshly ground black pepper canola oil<\/p>\n<p>Right after the ingredients are grated, take a towel a squeeze out all the excess water from the potatoes and beets. Mix all of the above ingredients together in a mixing bowl. Heat up a saute\u0301 pan with 1\u20442\u201d of oil. When the oil is hot (around 370 degrees F) create 2\u201d round patties from the mixture and fry on both sides until they are golden brown.<\/p>\n<p>For the yogurt sauce:<\/p>\n<p>4 pieces preserved lemon, rinsed, seeded, and finely chopped<\/p>\n<p>2 lemons, juiced<\/p>\n<p>2\/3 T honey<\/p>\n<p>1\u20442 tsp turmeric<\/p>\n<p>1 T extra virgin olive oil<\/p>\n<p>1 cup Fage Greek Yogurt<\/p>\n<p>Mix chopped preserved lemons with the honey to balance out the bitterness. Gently mix in the plain yogurt with the oil and lemon juice until you have a homogenous mixture. Add a pinch of turmeric for color, if you wish. Season with salt.
