Episode 3 Journal

What did you think of today's challenge?

Fairly tricky. It let us all know that this is serious stuff. No time to f*** around.

What did you prepare today?

French omelet Cali-style; Japanese pickled vegetables; sautéed long pepper prawns with fried heads; jasmine rice and spicy sausage and ponzu, with shitake shrooms and confit duck skin. Mmmm.

How do you think you did? Is there anything you wish you'd done better?

I did OK. Presentation and flavors were good. I could have used less salt or just rinsed my first step of pickling better.

What was the highlight of the day's events?

Rollin' wit da homies in those Fatty McFatterson rides.

Are there any lessons you took away from today?

That people should not speak negatively about their work. For obvious reasons. You gotta sell it.

What was the most constructive or interesting piece of feedback you heard from the judges?

Ming noticed how I used five shrimp/shrimp heads on one of my plates. That is good luck in Asian cultures. To Western perception, odd numbers are better on the eyes and brain. I will always know this.

How do you think you are doing in relation to your fellow competitors?

I think I am holding me own. I got good feedback on my presentations/creativity (from contestants). The judges, however, are tough all around. And I did put too much salt in my pickled vegetables.

Who do you think is faring the best and why?

That's a tough question. I really like Blair's wit/old-school talent. And he is just a good guy.

What do you think your fellow competitors think of you?

Well, I think some of them wish to live vicariously through me sexually. This has become sort of a fun joke with all the comrades.
