Episode 3 Journal
What did you think of today's challenge?
Today's challenge was an eye opener. Really grasping the concept and logistics of the show was a bit of an obstacle at first, but now that I have gotten my feet wet I feel I am more in control.
What did you prepare today?
Egg competition — omelette: garlic, shallot, thyme, salt and pepper, asparagus. Shrimp moussaka — eggplant caviar, lemon confit, tomato confit, shrimp infused with kaffir lime, long pepper.
How do you think you did? Is there anything you wish you'd done better?
I need to step it up and bring my "A" game; take what the chefs said to heart and build off the criticism. I will definitely "physically" write down a menu as a guideline to work off of instead of relying on thoughts.
What was the highlight of the day's events?
My highlight of the day was knowing that I will be back tomorrow to compete. Another plus was actually getting to shake Mr. English's hand and look him straight in the eye.
Are there any lessons you took away from today?
Don't crack under pressure. If you are dealt lemons — make lemonade.
What was the most constructive or interesting piece of feedback you heard from the judges?
Having Mr. English say, "I know you can cook better than that." A statement such as that encourages me to strive for my best and to prove to him I can do well.
How do you think you are doing in relation to your fellow competitors?
I feel I am stronger in my mind — more so than my other competitors. But as far as my actions/skills, I am a little rusty.
Who do you think is faring the best and why?
Katsuji was very creative and had speed. Matt and Blair I think did a solid job as well. I was surprised by Autumn's performance — she did well but she lacks in her people/speaking skills.
What do you think your fellow competitors think of you?
I think my fellow competitors were a little taken back by my silence today and realized that I was all business. I am not sure if they feel that that is me being unfriendly — it isn't.
