Episode 3 Journal

What did you think of today's challenge?

I was impressed by my competition today, and impressed by the creativity of the challenges put forth by the judges.

What did you prepare today?

Egg over-easy with shallot, scallion, and kimchee. Prawns with sausage, wrapped in charred onion rings. Layered veg. casserole with zucchini, fennel, onions, sausage, topped with eggplant and roasted-pepper purée.

How do you think you did? Is there anything you wish you'd done better?

On a scale of 1 to 10, I preformed a 5 overall. I wish I had prepared more mise en place so my dishes could have tasted better.

What was the highlight of the day's events?

Meeting the chefs, getting a new knife, and surviving an elimination!

Are there any lessons you took away from today?

When it comes to mise en place — go crazy! Grab anything and everything I may need — like oil! Pick one theme. Don't lack confidence when "selling" my food to the judges.

What was the most constructive or interesting piece of feedback you heard from the judges?

I enjoyed their critiques at the end of the day.

How do you think you are doing in relation to your fellow competitors?

On a scale of 1 to 10, a 5.

Who do you think is faring the best and why?

Katsuji was the best today. He did the most with the time allotted.

What do you think your fellow competitors think of you?

I think they like my presentations.
