It was a fun challenge, but not very inspiring for me.
What did you prepare today?
Sake, lemongrass broth with steamed snapper; crispy sizzling snapper with coconut Yucco; deep fried snapper with Thai chili dip.
How do you think you did? Is there anything you wish you'd done better?
I felt I did OK, but not good enough.
What was the highlight of the day's events?
Meeting Norman Van Aken.
Are there any lessons you took away from today?
Yes, don't cover crispy fish.

Be sure your food tastes good.
