What did you think of today's challenge?
It was very new and challenging going into an unfamiliar restaurant. Cooking for the first time was extremely hard — especially with all the bodies in the kitchen!
What did you prepare today?
Folded egg omelet with crème fraiche, asparagus ribbons and green onion, leek and shitake, yellow squash with soft-boiled egg garnish and duck confit. Oven-roasted prawn and watercress salad with citrus, seared duck breast with kaffir lime and purple rice.
How do you think you did? Is there anything you wish you'd done better?
I believe at first I was nervous — then it evened out a bit. I wish I would have never touched Billy's pot. Never.
What was the highlight of the day's events?
Breaking down the duck. I love duck!
Are there any lessons you took away from today?
Be prepared for anything. Believe in myself and keep doing the best that I can do.
What was the most constructive or interesting piece of feedback you heard from the judges?
I like that they liked my pâté base and that I made three dishes.
How do you think you are doing in relation to your fellow competitors?
We are all doing the best job that we can. It is stiff competition. I am very happy to be working with them all, and would gladly work with them again if given the chance sometime in the future after the show.
Who do you think is faring the best and why?
I have no idea — but I love Russ! I enjoy watching him — he has a very happy face.
What do you think your fellow competitors think of you?
I screwed up big time today. I apologized. I hope that they have gotten to know me and that they know it was a terrible mistake — (that I learned a great deal from!)
