What did you think of today's challenge?
I thought that today was one of the easier challenges we could have. Reproducing a dish is what line cooks are trained to do!
What did you prepare today?
Phyllo crusted Dover sole with crab mash, mustard beurre blanc and haricot verts.
How do you think you did? Is there anything you wish you'd done better?
I wish I had been on time, and that I had filleted the fish better and quicker.
What was the highlight of the day's events?
Winning and having the best dinner I have ever had.
Are there any lessons you took away from today?
Yes, I need to learn more about the fabrication of fish! (and meats)
What was the most constructive or interesting piece of feedback you heard from the judges?
Michael Mina said he would have sold my plate, the biggest compliment I could have received.
How do you think you are doing in relation to your fellow competitors?
I'm sure my competitors are dumbfounded, like I snuck in under their radar, I have more work to do to keep it up.
Who do you think is faring the best and why (we recognize this changes from day-to-day)?
Autumn is my biggest competition.

Hopefully, they realize I am here to win!
