Small producers still play a big role in America’s food system.
Many consumers are interested in fresh, local products, like those provided by the clammers, or baymen, of Long Island’s South Shore. Every weekend, Alex Duschere motors his boat out on the hunt for hard clams.
It’s labor-intensive work, using technology that hasn’t changed much since the days of the colonists.
But Duschere says it gives him a feeling of independence that can’t be beat.
