Chef Jean Louis Palladin opened his restaurant at the Watergate Hotel in 1979, which was where he met Joan Nathan and began to explore the challenges of kosher cooking. Not only does Chef Palladin adapt his own dishes for his observant clientele, he also updates traditional kosher meals, such as Joan Nathan's Glazed Corned Beef, with a contemporary flair.
