Mark Federman, owner of Russ & Daughters on New York's Lower East Side, has been filleting herring since he was a child. Although trained as a lawyer, he gave up his practice to take over running the family business when his father retired. His updated Herring recipe uses parchment paper instead of the Yiddish newspaper. "When you open the parchment paper and take a whiff it will bring you right back to your roots on the Lower East Side," said Mr. Federman. If you think the result lacks color without the printer's ink, use a lot of black pepper!
