Gary Danko, James Beardís Perrier-JouŽt Best Chef in California 1995, was born in New York to a Hungarian father. His grandmother was Jewish and Danko grew up with Hungarian cooking with Jewish overtones. The secret to a great knish, he says, are the humble ingredients. They typify many traditional recipes, which combine very basic ingredients to create a magnificent taste.
