Eighty-year-old retired baker Izzy Cohen has become quite a legend in the Los Angeles food world. His advice to would-be bagel bakers: "This is not bagels for dummies. But don't be afriad to try. You have a buildt-in clientele-your spouse and your kids. Nothing beats a fresh bagel, even if it's lousy!" Joan loves this recipe because anyone can make the dough and form the bagels, refrigerate or freeze them during the week (a many Jewish bakers used to do), and then boil and bake them on the weekends for breakfast.
