Dan Dan Noodle Recipe | PBS Food

Dan dan noodles is a noodle dish originating from the Sichuan region containing preserved vegetables, chili oil, Sichuan pepper, and minced pork over noodles. The recipe appears courtesy of Sam Huang of Shang Artisan Noodle in the Las Vegas episode of No Passport Required.



  • For topping:
  • 0.25 lbs pickle cabbage
  • 1 lbs ground pork
  • For sauce:
  • 1 tbsp sugar
  • 1 tsp salt
  • 0.5 tsp white pepper
  • 1 tbsp mashed garlic
  • 1 tbsp sesame oil
  • 3 tbsp chili paste
  • 4 tbsp soy sauce
  • 1 tbsp vinegar
  • For noodle:
  • 16oz wheat noodle
  • 16 cups water


  1. Stir fry the ground pork with pickle cabbage on medium flame until all water evaporated
  2. Bring the water to boil and place noodle in boiling water, keep water boiling for 2 minutes
  3. To prevent stickiness, rinse cooked noodles immediately in cold water
  4. Mix well all sauce ingredients, noodle, and meat in a bowl and enjoy!
