Tuscan Beef with Cannellini Beans & Sage

Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • 2 cups chopped greens (kale or chard)
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 1 teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried rosemary
  • 1 teaspoon minced fresh sage

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the onions and cook until softened, about 5 minutes.
  2. Add the garlic and cook 1 minute more, stirring frequently.
  3. Add the ground beef, breaking it up with a spoon. Cook until browned and cooked through. Season with the salt, pepper, rosemary, and sage.
  4. Stir in the chopped greens and cook until wilted, about 2 minutes.
  5. Remove from the heat and fold in the drained beans until evenly combined. Taste and adjust seasoning. Serve warm.
