Coconut Bunny Cupcakes

These coconut bunny cupcakes are easy to put together and you can even let your little one help! They’re sprinkled with shredded coconut to mimic bunny fur and the nose and eyes are made from candy and can be eaten too!
Decorating these coconut bunny cupcakes is almost as fun as eating them. This dessert is great when served at an “Elinor Wonders Why” birthday party, Easter, or any spring celebration.

Bake 24 vanilla cupcakes and let them cool.

Add the vanilla frosting to each cupcake using a spoon. Spread a small dollop of frosting and gently spread with the back of a spoon. For a fancier dollop, you can pipe the frosting onto each cupcake using a piping bag and tip.

Sprinkle the shredded coconut flakes on each cupcake. Cover as much of the frosting as you like. The more coconut added, the “fluffier” the cupcake will look.

Draw two skinny ovals resembling “bunny ears” on the sheet of white cardstock. Color the inside of the paper ears with the pink marker or crayon. Cut them out.

Place the ears on top of the cupcake and gently push the bottom of each ear into the frosting.

To create the bunny nose, trim the lollipop stick by 1 inch.

Place the lollipop in the center of the cupcake. Gently push it down so it rests right above the bottom of each ear.

Place two small chocolate chips under the ears and above the nose for the “eyes”.
