Learn how to transform your Thanksgiving leftovers into a brand new meal with Chef Marcus Samuelsson's Cyberchase recipe.

Ingredients

Broth Recipe Ingredients:

  • Leftover turkey carcass and bones
  • 4 white onions (charred)
  • 8 oz. ginger (peeled and charred)
  • 3 oz. fish sauce
  • 2 pods star anise
  • 1 stalk lemongrass
  • 96 oz. water

Directions:

  1. In a large pot, place the bones in with enough water to cover. Bring to a boil to remove any impurities from the bones.
  2. Once the bones have been washed, remove from boiling water.
  3. In a separate stock pot, add the turkey bones, ginger, star anise, and water.
  4. On a grill or in a cast iron pan, char the white onions and ginger. Add them to the stock pot.
  5. Allow the both to simmer for 2 hours. Once the broth is fortified, strain and reserve.

Egg Recipe Ingredients:

  • 3 eggs
  • 1 tbsp soy
  • 1 tsp mirin
  • 2 tsp chopped chives

Directions:

  1. In a nonstick pan with oil, make an open-face omelet using the eggs, soy, mirin, and chives.
  2. Roll and slice thinly to create the egg inside the soup.

Directions

1

In a large bowl, pour the broth and then add the turkey and noodles.

2

Garnish with the egg, scallion, sprouts and cabbage.

3

Finish with scallions on top.
